Chickpea Veggie Patties

Ingredients

  • 1 medium carrot, cooked;
  • 1 can organic chickpeas;
  • Coriander leaves;
  • Ground coriander;
  • Garlic;
  • Lemon Wedges;
  • Parsley leaves;
  • Frozen peas;
  • Udu Oil or vegetable oil;
  • Egg yolk;
  • Ground cumin;
  • Dried gluten free breadcrumbs;
  • Greek style yogurt (omit if you like).

Method

  1. Combine all ingredients except breadcrumbs and yogurt in a food processor;
  2. Make as many patties as you like;
  3. Coat in Breadcrumbs;
  4. Cook with small amount of coconut oil on BBQ or pan;
  5. Serve with tahini, hummus or greek style yogurt.
